One of my favorite blogs "101 Cookbooks" posted this recipe today. Sounds delish and appropriate for you gardeners.

Sautéed Zucchini

I hate to say this, but if you want to do a larger amount, double the recipe, but divide and cook the zucchini in two pans. If you crowd the squash too much, it steams rather than browns, and loses too much structure, which isn't what you're after.

2 tablespoons extra virgin olive oil
5 medium garlic cloves, thinly sliced
3 medium shallots or new red onions, thinly sliced
fine grain sea salt
2 medium zucchini, sliced into 1/4-inch thick coins
a good handful of dill, chopped
1/4 cup Marcona almonds or toasted almond slices

In your largest skillet heat the oil over medium-high heat. Stir in the garlic and cook until it starts to take on a hint of color. Stir in the shallots and a big pinch of salt, and cook until they start to soften, a couple minutes. Add the zucchini, stir to get it coated with a bit of oil, and arrange the coins in as much of a single layer as your pan permits. Dial the heat up a bit if needed, add another pinch of salt and cook, stirring occasionally until the zucchini browns - ten minutes or so. Remove from heat and fold in the dill and almonds before serving. Taste, and adjust the seasoning if necessary.

Serves 2 - 4.

Thanks for the zucchini recipe, because sometimes I feel like the proverbial deer in the headlights when I look at my zucchini plants blooming like mad this week. I took the first cute little zucchinis, sliced, and the last leaves of spinach from my garden yesterday to put in my crustless quiche that I baked ahead for my workdays breakfasts. I printed this recipe out so I'll be ready when the zucchini hits!

You wrote zucchini plantS... as in plural??? You must be one of those people who leave zucchini on people's doorsteps when they aren't looking!

I might take you up on the zucchini offer- I did not plant a full garden this year- no zucchini at all! I hope to make up for my sins next year.

Seriously, Lise, I would love to share in your bounty as well! Thanks for the offer.

Carla, could Lise just put a bag in your waiting room so we HHOers or H2Oites could simply and quietly slip in and pick up some? Lise, would it be possible to drop some by the office?

If that doesn't work for either of you, I completely understand. Just a thought.

Last year, I used up extra zucchini by grilling it. Simply sliced in lengthwise in 1/8 inch slices and brushed with various options such as balsamic vinegar or a mustard concoction. Then grilled over low heat (watching carefully) and serve as a side dish. This actually ended up freezing quite well also using my Foodsaver vacuum sealer.

Dear zucchini eaters,
So far I'm keeping up, I'm picking while the zucchinis are still quite small,adding them to everything. Eggs, salads, grills. Carla, I think grilling is an awesome way to fix it. And last summer I found almost any veggie goes on the grill.

Heres a recipe for my MIL's Zucinni relish. She won the Special Award for it at the fair this year. Thought I'd share as we enjoy it through the year. I had no idea till just now how much salt and sugar went into it so maybe it's not a good recipe after all for healthy habits. Maybe it can be revised though, a great way to use up zucinni.

Also on the same page is the baby dills that we love so much. You pick the cucs when they're real little for this one. Cutie pickles
