CHICKEN SALAD

Description Wonderful, low-fat chicken salad recipe for a light dinner or a hearty sandwich.

  • 6 oz shredded chicken
  • 1/3 cup dried cranberries or diced apples
  • 1/4 cup sliced almonds or chopped walnuts
  • 2 green onion, sliced
  • 2 small ribs celery, chopped

Dressing:

  • 1/2 cup plain Greek Yogurt
  • 1/2 teaspoon curry powder
  • 2 teaspoons soy sauce s
  • queeze of lemon juice
  • salt, to taste
Methods/steps
  1. Mix dressing ingredients and pour over chicken mixture.
  2. Combine chicken through celery in a bowl.
  3. Toss to coat.
  4. Serve!
